* Salmon Fillet - Rubbed with Jamaican jerk seasoning before baking. ** Coconut Milk Rice - Substitute coconut milk for water when preparing rice. Add diced red pepper and sliced green onions to cooked rice. *** Grilled Pineapple Ring - Peel and slice fresh pineapple into 1/2 inch rings. Grill pineapple; brush with 2 tablespoons melted butter combined with 1/4 cup brown sugar. Grill until golden brown; cut each pineapple ring in half. To Plate: Salmon fillet in center of plate. Spoon coconut milk rice on one side of Salmon; top with toasted coconut. Place two pineapple pieces and fresh herb beside Salmon. Ref: 000001/000021
