Instructions
* Basil Vinaigrette - Whisk together 1/2 oz. white vinegar and 1/2 oz. Dijon mustard. Gradually add 2 oz. vegetable oil, whisking to mix well. Stir in 1 1/2 teaspoons dried basil leaves; season to taste with salt and pepper. (Yield: 3 oz.)
To Plate: Place field greens on luncheon plate; top with tomato, pepper strips and cucumber. Top with Salmon fillet; drizzle with Basil Vinaigrette. Place focaccia wedge on plate edge.
