Instructions
* Ginger Scallion Oil - Combine in a bowl 1 thinly sliced scallion, 1 1/2 teaspoons minced fresh ginger, 1/4 teaspoon minced garlic, and a pinch of crushed red pepper. Heat 1 tablespoon vegetable oil until shimmering; pour the hot oil over the scallion mixture. Stir in 1 teaspoon lemon juice, 1/2 teaspoon soy sauce and 1/4 teaspoon salt. (Yield: 2 oz.)
To Plate: Place Salmon in center of plate; drizzle with ginger scallion oil. Place snow peas and carrots beside Salmon.
